Avocado Artichoke Hearts of Palm Salad with Champagne Vinaigrette

This salad is just the type you can make year round. You won’t miss the meat, because all the vegetables in this salad are meaty and filling.

ingredients:

For the Salad
  • 8 cups spring mix lettuce
  • 1 (14 oz.) can of artichokes, cut in half
  • 1 (14 oz.) can of hearts of palm
  • 1 avocado, sliced thinly
  • 1/4 cup pistachios
  • desired amount of Parmesan shavings
  • desired amount of Champagne Vinaigrette (recipe below)
For the Champagne Vinaigrette
  • 1 clove garlic, minced
  • 2 tablespoons Dijon mustard
  • 1/4 cup champagne (or 1/4 cup champagne vinegar and omit the apple cider vinegar)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons lemon juice
  • 2 teaspoons packed Sukrin Gold
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup extra virgin olive oil

instructions:

For the Champagne Vinaigrette
  1. Combine all ingredients in a blender or food processor. Pulse until emulsified. Or whisk all ingredients except olive oil together. Then slowly whisk in olive oil until dressing is emulsified.
