Bacon and Blue Cheese Burgers


For Cloud Buns
  • 3 eggs, separated
  • 3 oz. cream cheese
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon sweetener
For the Burgers
  • 1.25 lbs. ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 tablespoons crumbled blue cheese
To Assemble
  • Cloud buns
  • Blue Cheese Burgers
  • Caramelized Onions
  • 8 strips cooked bacon
  • 4 slices tomatoes
  • Lettuce
  • Mustard


For Cloud Buns
  1. Beat yolks, cream cheese, and sweetener together in medium bowl. In another bowl, beat egg whites and cream of tartar until you get stiff peaks. Be sure not to get any yolk into the white mixture. Gently fold the whites into the yolks. Heat oven to 300. Line 2 baking sheets with parchment paper. Spoon about 2 1/2 tablespoons worth of batter onto the sheets and spread into circles. You should end up with 10. Bake for about 30 minutes or until they turn golden brown.
For the Burgers
  1. Mix together beef and seasonings. Form into 4 balls. Punch a hole into each and fill with 1 tablespoon of cheese each. Seal up your hole so that the blue cheese is completely covered inside. Grill.

  1. Assemble your burger with the above ingredients and enjoy!
