Bacon Mushroom Swiss Burger with Caramelized Onions on Herbed Cloud Bun

ingredients:

For the Rosemary Parmesan Cloud Buns
  • 3 eggs
  • 3 tablespoons softened cream cheese
  • 1/4 teaspoon cream of tartar
  • 1/4 cup parmesan or pecorino romano
  • 1 teaspoon chopped rosemary
For the Caramelized Onions
  • 2 onions cut in half, then chopped across to create thin strips
  • 1 tablespoon olive oil
  • pinch salt
For the Brown Butter Mushrooms
  • 2 cups sliced button mushrooms
  • 1/4 cup chicken or beef stock
  • 2 tablespoons butter
For the Burgers
  • 2 lbs. ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Montreal Steak Seasoning
  • 1 teaspoon Season All
  • 1/4 teaspoon pepper
  • 5 slices Swiss cheese
To Assemble
  • Rosemary Parmesan Cloud Buns
  • Burger Patties 
  • 5 slices of cooked bacon
  • Caramelized Onions
  • Brown Butter Mushrooms
  • spicy brown mustard

instructions:

For the Rosemary Parmesan Cloud Buns
  1. Heat oven to 300 degrees. Separate eggs. Mix yolks, cream cheese, Parmesan cheese, and rosemary together in small bowl.
  2. Whip whites and cream of tartar in separate bowl until you get medium- stiff peaks. Gently fold yolk mixture into white mixture.
  3. Line baking sheet with parchment paper. Place 10 bun-sized circles on tray. Bake for about 30 minutes or until a light golden brown.
For the Caramelized Onions
  1. Heat pan to low-medium heat. Add in oil and onions.
  2. Cook until light brown and soft, stirring along the way. Add the pinch of salt to the onions when they have cooked for about 15 minutes. It usually takes about 25 minutes for them to caramelize.
For the Brown Butter Mushrooms
  1. Heat pan to medium heat. Add all ingredients to pan. Cook for about 20-25 minutes.
For the Burgers
  1. Mix all ingredients together. Form into 5 patties. Grill. Add on cheese after first flip. Once ready, assemble your burgers. Place one patty on bottom bun, then onions, mushrooms, mustard, bacon, then top bun. Enjoy!
