Brazilian Skirt Steak with Chimichurri

ingredients:

For the Steak
  • 2 - 2 1/2 pounds of skirt steak
  • juice of 2 lemons
  • 2 tablespoons minced garlic
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
For the Chimichurri
  • 1 cup chopped parsley
  • 1/2 cup chopped cilantro
  • 4 cloves minced garlic
  • 1 teaspoon salt
  • 1 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon crushed red pepper
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil

instructions:

For the Steak
  1. Mix all ingredients except steak in a casserole dish. Place steak in dish, turning over to coat the steak in the marinade. Cover and marinade in refrigerator for 4-8 hours. Make chimichurri sauce.
For the Chimichurri
  1. Mix all ingredients in a bowl. Set aside.
To Assemble
  1. When steak is done marinating, heat your grill on high. Cook steaks for about 3-6 minutes on each side, or until your steak reaches 125-130 degrees. Then remove from grill and let rest for 5 minutes.
  2. Cut your steak in half, then cut into thin strips against the grain. Top with chimichurri and serve.
