Buffalo Chicken Meatballs

ingredients:

For the Meatballs
  • 2 lbs. ground chicken
  • 3 chopped scallions
  • 2 teaspoons coconut aminos
  • 3 teaspoons Season All
  • 1 1/2 teaspoons salt
  • 2 tablespoons hot sauce
  • 1 cup almond flour
For the Sauce
  • 2/3 cup hot pepper sauce (like Frank's Red Hot)
  • 1 stick butter
  • 1 1/2 tablespoons white vinegar
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika

instructions:

For the Meatballs
  1. Mix all ingredients together except almond flour. Roll into balls, then coat balls in almond flour. Bake at 400 for 15-20 minutes or until temperature reaches 165 degrees.
For the Sauce
  1. Dip cooked meatballs into sauce. Serve up to your hungry guests!
