Cajun Shrimp and Sausage Kabob Salad

Cajun Shrimp and Sausage Kabob Salad

This dish is incredibly simple, but has a spectacular presentation. It is incredibly versatile - perfect for a casual weeknight, a barbecue, or a dinner party.


For the Kabobs
  • 1 lb. andouille sausage
  • 1 lb. shrimp
  • 1 1/2 bell peppers
  • 1 medium onion
  • 1 teaspoon Cajun seasoning
For the Dressing
  • 1/4 cup mayo
  • 1/4 cup sour cream or plain yogurt (try Siggi's whole milk skyr)
  • 1 teaspoon Cajun seasoning
  • 6 cups mixed green lettuce (or enough to fill 4 bowls)


For the Kabobs
  1. Soak 12" skewers in water for about 20 minutes.
  2. Heat your indoor or outdoor grill to medium. Cut the sausage into 3/4 inch rounds. 
  3. Cut peppers and onions into 1 inch pieces. Season shrimp with seasoning.
  4. Skewer the sausage, shrimp, peppers, and onions. 
  5. Grill for about 20 minutes rotating along the way.
For the Dressing
  1. Mix mayo, sour cream or yogurt, and seasoning in bowl. Place onto greens.
  2. Put three skewers on top of each bowl and top with a little more dressing.
