Cajun Shrimp Lemon Zucchini Noodles

This zesty dish will add some spice to your keto life.


For the Zucchini Noodles and Sauce
  • 1 large zucchini, made into noodles
  • 1/4 cup olive oil
  • zest of 1 lemon, juice of 1 lemon
  • 1/2 cup chopped scallions
  • 1/4 cup chopped parsley
  • salt and pepper to taste
  • 3/4 cup grated pecorino cheese
For the Cajun Shrimp
  • 1 lb. peeled shrimp
  • 1/4 cup olive oil
  • 1 clove garlic chopped
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped parsley
  • 1 tablespoon coconut aminos
  • 1 tablespoon monk fruit sweetener


For the Zucchini Noodles and Sauce
  1. Mix oil, lemon juice and zest, scallions, and parsley in a bowl. Set aside.
For the Cajun Shrimp
  1. Mix oil, garlic, seasoning, lemon juice, parsley, coconut aminos, and sweetener in bowl. Toss over shrimp. Marinate in refrigerator for at least one hour.
  2. Once done marinating, put zucchini noodles, sauce, and shrimp into large pan and cook on medium heat. Once shrimp is almost done cooking, add 3/4 cup pecorino cheese. Serve immediately.
