Heat oven to 350. Place your chicken breasts in between two layers of plastic wrap and pound with a heavy object to flatten. We used a rubber mallet.
Season chicken with one teaspoon of Season All and 1/8 teaspoon of pepper on each breast. Place 2 slices ham, 2 slices cheese, and 1.5 tablespoons mustard on top of each flattened chicken. Proceed to roll up your chicken. Secure with toothpicks. We used five picks for each breast.
Whip up your eggs in a bowl with a fork. Mix almond flour and pork rinds in a bowl. Coat chicken breast in egg, then coat in crumb mixture.
Place on greased baking sheet and bake for about 45 minutes, or until temperature reaches 160 degrees. Let cool for 10 minutes or until temperature reaches 165. Enjoy!
