Chorizo Meatballs with Goat Cheese Sauce

Chorizo pairs unexpectedly well with goat cheese in this delectable dish.


For the Meatballs
  • 1 pound chorizo
  • 1 pound ground chicken
  • 1 pound ground pork
  • 10 oz. can Rotel
  • 3 tablespoons coconut aminos
  • 3 tablespoons chopped cilantro
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 3 teaspoons salt
For the Goat Cheese Sauce
  • 8 ounces goat cheese
  • 6 ounces goat Gouda
  • 2 (4.5 ounce) cans chopped green chilies
  • 1/2 cup chicken stock


For the Meatballs
  1. Combine all ingredients. Form into balls. Place on baking sheet and bake at 400 degrees for about 15-20 minutes. Place meatballs in skillet on top of goat cheese sauce and simmer. Garnish with chopped cilantro, sriracha, and cracked black pepper.
For the Goat Cheese Sauce
  1. Combine all ingredients in skillet and cook until hot and smooth.
