Goat Cheese, Pomegranate, Pistachio, and Caramelized Shallot Salad

This salad is elegant and delicious.

ingredients:

  • 6 cups mixed greens
  • 3 tablespoons pomegranate seeds
  • 3 tablespoons pistachios (use walnuts or pecans if trying to go lighter on carbs)
  • 2 oz. goat cheese
  • 1/2 cup shallots, sliced

instructions:

  1. Heat a tablespoon of olive oil on low. Sautee shallots for about 20 minutes or until they get softened and sweet. Assemble salad by placing greens in large serving bowl. Top with pomegranate, pistachios, goat cheese, and shallots. Serve with balsamic vinaigrette and olive oil, or your favorite low carb dressing.
