This meal is a real family dinner. That means the husband and kid LOVE it.
1 1/2 lbs. cooked and shredded chicken
2 tablespoons butter
1 medium onion, diced
2 minced garlic cloves
1 (10 oz) can Rotel
4 oz. cream cheese
1/2 cup chicken stock
1/4 cup heavy cream
1 teaspoon Season All
3 (7 oz. bags) Shirataki Noodles (prepared according to directions)
1 egg, beaten
1 1/2 cup shredded cheddar
Melt butter in pot on medium heat. Sautee onion and garlic. Once softened, add Rotel. Cook for several minutes, then add cream cheese.
When cream cheese has melted, add chicken stock, heavy cream, and Season All. Add noodles. Let sit at low-medium heat for several minutes. Add egg, quickly mixing it in so it doesn’t scramble. We just want to thicken the sauce with the egg. Add in chicken and stir.
Heat oven to 350. Pour mixture into baking dish. Top with cheese. Bake for about 10-15 minutes or until bubbly and cheese has melted. Garnish with chopped parsley and serve up!
