Keto Gumbo Skillet

This dish has all of the flavors of a gumbo, but is quick to make and ready to eat in no time.


  • 1.3 lbs. chicken breast, chopped into 1" pieces
  • 12 oz. andouille sausage, chopped into rounds
  • 1 cup diced celery
  • 1 cup diced green bell pepper
  • 1 cup diced onion
  • 8 oz. frozen chopped okra
  • 2 cloves minced garlic
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon thyme
  • 1 teaspoon salt
  • 1 teaspoon season all
  • 1 tablespoon coconut flour
  • 1 teaspoon xanthan gum
  • 1/2 cup chicken stock


  1. Heat skillet to medium heat and add 2 tablespoons of olive oil. Cook sausage and chicken until halfway cooked.
  2. Add in celery, bell pepper, onion, okra, garlic, paprika, cayenne, thyme, salt, and season all. When meat is just about cooked through, add coconut flour and xanthan gum. Stir and let cook for one minute, then add chicken stock.
  3. Stir and cook until sauce gets viscous and coats all the meat and vegetables. Add extra salt to suit your taste if needed. Garnish with chopped parsley and hot sauce.
