Keto Pesto Pizza

Sometimes it's nice to do something different from the usual pizza flavors. You've got to keep your Keto life fresh.


For the Pesto
  • 2 cups basil
  • 1/2 cup parmesan
  • 1/3 cup walnuts
  • 3 cloves garlic
  • big pinch salt
  • big pinch Sukrin Gold or other sweetener
  • 1/2 cup olive oil
For the Fat Head Crust
  • 1 1/2 shredded mozzarella
  • 2 oz. cream cheese
  • 1 egg
  • 3/4 cup almond flour
To Assemble
  • 1/4 cup pesto
  • 1 baked and chopped chicken breast
  • 1/2 cup shredded mozzarella (or more depending on how cheesy you want it)
  • 3 oz. crumbled goat cheese
  • 12 chopped sundried tomatoes.


For the Pesto
  1. Blend first 7 ingredients together in blender or food processor. Slowly add in olive oil. Blend for another minutes until completely smooth.
For the Chicken
  1. Heat oven to 350. Rub olive oil and seasonings onto chicken (I used Season All, but you can use Italian seasoning or just salt and pepper). Bake for about 25 minutes or until internal temperature reaches 165.
For the Fat Head Crust
  1. Heat oven to 425. Microwave cheeses in bowl for 1 minute. Stir. Stir in egg and flour with fork. Knead with hands until combined. Roll out in between two pieces of parchment paper. Remove top layer of parchment and slide the crust (while still on the parchment) onto a baking sheet. Bake for 10-12 minutes.
To Assemble
  1. Smooth pesto onto par-baked fat head crust. Sprinkle chicken, mozzarella, goat cheese, and sun-dried tomatoes on top. Bake at 425 for 5 more minutes or until the cheese is melted. Enjoy!
