Keto Pumpkin Cream Cheese Whoopie Pies

These super soft Pumpkin Cream Cheese Whoopie Pies are a perfect Fall dessert.

ingredients:

For the Cookie Layers
  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1 stick softened butter
  • 1 cup sweetener (like erythritol)
  • 2 eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
For the Cream Cheese Filling
  • 4 oz. softened cream cheese
  • 6 tablespoons softened butter
  • 1/2 teaspoon vanilla extract
  • 1 cup confectioner erythritol (If you can’t find the confectioner, put granular erythritol in a food processor and pulse until it gets powdery)

For the Cookie Layers
  1. Mix flour, baking powder, baking soda, cinnamon, pumpkin pie spice, xanthan gum, and salt in medium bowl. In large bowl, beat butter and sweetener together. Add eggs in one at a time.
  2. Next, add pumpkin puree and vanilla extract. Beat for a minute to incorporate. Slowly beat in dry ingredients.
  3. Heat oven to 350. Spoon 1 tablespoon of batter onto parchment-lined baking sheets (appx. 3 baking sheets). Spread the batter around with your finger in a circular motion so that you end up with flat 2” circles. The batter doesn’t spread a lot, but do leave about an inch in between cookies.
  4. Bake for 11-12 minutes or until the tops start to brown slightly.
For the Cream Cheese Filling
  1. Beat all ingredients together. Once the cookies have cooled, spoon 2-3 teaspoons of filling onto bottom cookie layer. Top with second cookie layer. Enjoy!

NOTES:

Here are some tips before you get started.  
1. Put about 1 tablespoon of batter onto parchment lined sheet. Spread it around with your finger and smooth it into a nice flat circle shape, about 2” in diameter.
2. Be careful with the baked cookies. They are very soft.
3. Spread 2-3 teaspoons of cream cheese filling onto bottom cookie layer, then top with second cookie layer, being careful not to smoosh it. You could probably just pipe the filling on too. Either way works.
