Keto Reuben Soft Pretzel

Yield: 3 large pretzels, 4-5 medium pretzels, or 6-8 smaller pretzels

Keto Reuben Soft Pretzel

This is perfect for when you want something really decadent and delicious.


For the Pretzel
  • 3 cups shredded mozzarella
  • 4 tablespoons cream cheese
  • 1 1/2 cups almond flour
  • 1 teaspoon caraway seeds
  • 2 teaspoons xanthan gum
  • 2 eggs
  • 2 teaspoons dried yeast, mixed in 2 tablespoons warm water and set aside for a few minutes
  • 4 tablespoons melted butter
  • Pretzel salt for sprinkling (or coarse sea salt)
For the Reuben Dip
  • 8 oz. softened cream cheese
  • 1 cup Swiss cheese, shredded or cut into shreds
  • 1 cup sauerkraut, most of the juice squeezed out
  • 1 cup corned beef, chopped into small pieces
  • 1/4 cup thousand island dressing


For the Pretzel
  1. Heat oven to 350. Put mozzarella and cream cheese in microwave safe bowl and microwave for about 2 minutes at 30 second intervals, until cheese is melted. Ensure that no more cheese shreds are visible.
  2. Put your dough hook on your stand mixer. Mix almond flour and xanthan gum. Add in eggs, yeast mix, and 2 tablespoons of your melted butter. Then add your cheese mix. Allow the mixer to knead the dough for about 10 minutes, scaping down the sides of the bowl if necessary.
  3. Roll your dough into pretzels shapes on parchment paper. It helps to tape down your parchment to the counter. Drizzle with melted butter and sprinkle coarse salt on top. Place on parchment lined baking sheet.
  4. Bake at 350 for 20-25 minutes or until cooked through and browned all over.
For the Reuben Dip
  1. Mix all ingredients in a bowl. When pretzels are done baking, put a generous amount of Reuben dip on top. Top with more Swiss cheese shreds and sprinkle a little Season All on top. Put back in the oven and bake for another 5 minutes or until the cheese is melted. Enjoy!
