Keto Soft Pretzels


For the Pretzels
  • 3 cups shredded mozzarella
  • 4 tablespoons cream cheese
  • 1 1/2 cups almond flour
  • 2 teaspoons xanthan gum
  • 2 eggs
  • 2 teaspoons dried yeast, mixed in 2 tablespoons warm water and set aside for a few minutes
  • 4 tablespoons melted butter
  • Pretzel salt for sprinkling (or coarse sea salt)
For the Cheese Sauce
  • 2 tablespoons cream cheese
  • 1/2 cup shredded cheddar
  • 1 teaspoon sriracha
  • 2-3 tablespoons of almond milk


For the Pretzels
  1. Heat oven to 350. Put mozzarella and cream cheese in microwave safe bowl and microwave for 1- 1.5 minutes at 30 second intervals, until cheese is melted.
  2. Put your dough hook on your stand mixer. Mix almond flour and xanthan gum. Add in eggs, yeast mix, and 2 tablespoons of your melted butter. Then add your cheese mix. Allow the mixer to knead the dough for about 10 minutes, scraping down the sides of the bowl if necessary.
  3. Divide the dough up into 12 balls and roll each into a skinny log. Hold up the ends of the log into a U shape. Twist the ends around each other twice. Then lay down and stick the ends on the base of what was previously the U shape.
  4. Place on parchment-lined cookie sheet and brush with melted butter. Sprinkle with salt. Bake for about 15 minutes or until they are golden brown. Enjoy!
For the Cheese Sauce
  1. Stir it in a sauce pan and add more milk to get it to the right consistency.
