Keto Swedish Meatballs

ingredients:

For the Meatballs
  • 1.25 lbs. ground beef
  • 1.25 lbs. ground pork
  • 1 medium onion, grated
  • 2 eggs
  • 1/2 cup almond flour
  • 1 teaspoon salt
  • 1 teaspoon Season All
  • 1/2 teaspoon pepper
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon garlic powder
  • 2 tablespoons chopped parsley
  • 1 tablespoon butter and 1 tablespoon olive oil, divided into two 9” skillets
For the Sauce
  • 2 tablespoons butter in each skillet
  • 2 tablespoons cream cheese in each skillet
  • 2 tablespoons sour cream in each skillet
  • 1 cup beef broth in each skillet
  • 1 teaspoon Dijon mustard in each skillet
  • 1/2 teaspoon Worcestershire in each skillet (use coconut aminos if eliminating soy)
  • 1/4 teaspoon Season All in each skillet
  • 1/8 teaspoon xanthan gum in each skillet

instructions:

For the Meatballs
  1. Mix beef, pork, onion, eggs, flour, salt, pepper, season all, nutmeg, garlic powder, and parsley in large bowl until combined. Roll into balls.
  2. Heat skillets to medium heat and melt butter and olive oil. Place meatballs in skillet and sear on all sides. The meatballs should be only about 50 percent cooked, then remove them onto plate.
For the Sauce
  1. Put all ingredients in your skillets on medium high heat until bubbling, whisking along the way. Reduce heat to medium low and place seared meatballs in sauce. 
  2. Toss the meatballs gently to coat them in the sauce. Serve when they reach 160. Garnish with chopped parsley. Enjoy!
