Reuben with Keto Caraway Bread

ingredients:

For the Keto Caraway Bread
  • 1 1/2 cups almond flour
  • 6 large eggs, separated
  • 4 tablespoons melted butter
  • 3 teaspoons baking powder
  • 1/4 teaspoon cream of tartar
  • 2 teaspoons bruised caraway seeds (roll them in your fingers or bruise with mortar and pestle)
  • 1 teaspoon erythritol
  • a pinch of salt
For the Sandwich
  • 8 teaspoons softened butter
  • 2 cups of corned beef
  • 1 cup sauerkraut (drained and liquid squeezed out slightly)
  • 6 slices Swiss cheese
  • 4 tablespoons thousand island dressing

instructions:

For the Keto Caraway Bread
  1. Heat oven to 375. Butter a 8"x4" loaf pan.
  2. Separate eggs, putting whites in a bowl with the cream of tartar, and putting the yolks in a food processor. Beat whites and tartar, gradually increasing the speed. Beat until soft peaks are formed.
  3. Add melted butter, baking powder, caraway seeds, erythritol, and salt to food processor, along with half of the whites. Beat until combined.
  4. Transfer the mixture into the egg white bowl and gently fold the remaining whites into the mixture. Be sure not to over-mix the dough or you won't end up with fluffy bread.
  5. Bake for 25-30 minutes. Cut 8 slices (not too thick!) and set aside.
For the Sandwich
  1. Heat skillet to 3 or low-medium heat. Warm corned beef and sauerkraut in the microwave for 20-30 seconds.
  2. Spread butter on outsides of bread. Put 1 slice of Swiss cheese on bottom layer of bread, followed by corned beef, then dressing, then sauerkraut, then 1/2 slice of Swiss cheese. Top with bread slice. Butter should be on the outsides of your sandwich so that it grills up nice and golden brown.
  3. Place your sandwiches on your skillet. Once the skillet side is golden brown, carefully flip. Once second side is gold brown, remove and plate. Cut in half and serve.

NOTES:

A few tips:
1. Don't cut your bread slices too thick. Ratios matter. Bread serves a very important purpose for the sandwich, but let's not make it the star of the show.
2. Tear or cut your corned beef into smaller pieces. Larger slices may get pulled out while biting and destroy the integrity of your sandwich.
3. Warm the corned beef and sauerkraut in the microwave prior to sandwich assembly. This will ensure that your sandwich gets nice and hot all the way through during the grilling process. It will also help to get your cheese melting.
4. Don't put your skillet on too high. It is very important to not let your bread get too brown before your cheese is melted and the meat is heated through. However, if you make this rookie mistake, it is okay. Remove your sandwich when the bread is perfectly browned and heat in the microwave for 30-60 seconds until everything gets hot and melty.
