Ribeye Goat Cheese Caramelized Onion Thyme Keto Pizza

There are a lot of steps involved, but the payoff is big. This pizza is perfect for a date night in or for a small dinner party. You are guaranteed to wow your guests.


For the Crust
  • 1 1/2 cup shredded mozzarella
  • 2 oz. cream cheese
  • 1 egg
  • 3/4 cup almond flour
For the Toppings
  • 5 oz. thawed and drained frozen spinach
  • 1 roasted garlic
  • 1 caramelized onion
  • 2 oz. goat cheese
  • 1 cup shredded fontina
  • 1/3 cup balsamic crema
  • 2 teaspoons fresh thyme
  • 1 cooked ribeye
For the Balsamic Crema
  • 4 oz. cream cheese
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon butter
  • 1/4 cup (plus maybe some extra if needed) heavy cream
  • pinch salt


For the Crust
  1. Heat oven to 425. Melt mozzarella and cream cheese in bowl in microwave. Microwave for 1 minute, remove and stir, then microwave again for 45 seconds. 
  2. Add in egg and flour. Knead with hands until it is well combined. Roll out in between two layers of parchment paper. Remove top layer and parchment and discard, keeping dough on bottom layer.
  3. Transfer to baking sheet and bake for about 12-14 minutes or until crust begins to brown.
For the Roasted Garlic
  1. Heat oven to 425. Cut top third off of whole garlic bulb. Drizzle with olive oil and sprinkle with coarse salt. Wrap in foil and bake for 45 minutes. Squeeze out garlic cloves.
For the Caramelized Onion
  1. Heat skillet to low. Drizzle some olive oil in pan. Slice one medium onion thinly. Cook on low heat for 20-25 minutes or until softened and browned.
For the Balsamic Crema
  1. Combine all ingredients in sauce pan and cook medium low until melted.
For the Pizza
  1. Assemble toppings on top of baked crust. Lower heat to 400. Put back in oven and cook 5-7 minutes or until melted.
