The roasted garlic really does the trick in this delectable low carb side dish.
1 large head cauliflower, cut into florets
1 bulb garlic
3 oz. softened cream cheese
2 tablespoons softened butter
1 tablespoon fresh rosemary
1 teaspoon salt
Heat oven to 400. Cut the top off of your garlic bulb (cut about 1/2 inch off of the top) and drizzle olive oil over it. Wrap in aluminum foil and bake for 40 minutes, or until the garlic gets soft and has a nutty aroma.
Steam cauliflower by placing florets in steamer basket and put basking into pot that has about 2 inches of water. Steam for about 25-30 minutes or until cauliflower is pierced easily with a knife.
Put cauliflower in food processor. Squeeze out roasted garlic into food processer, and add remaining ingredients. Blend for a few minutes, or until it gets nice and creamy.
