Sausage and Kale Soup

It doesn’t really get any easier than this.


  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 1 lb. mild Italian ground sausage
  • 6 cups chicken stock
  • 3 cups chopped kale


  1. Heat olive oil in large pot to medium heat. Add in onion and garlic. Stir and cook for 4-5 minutes or until onions soften. Add in sausage and cook through.
  2. Pour in stock and bring to a boil. Add in kale and stir. Cover and boil, then reduce heat to low and simmer. Let simmer for 30 minutes. Enjoy!
