This dish is so amazing. It is super easy and a crowd-pleaser
1 lb. bacon , diced
1 small-medium onion, diced
2 cloves garlic
8 oz. mushrooms, sliced (like shiitake)
4 sprigs thyme
1/2 cup heavy cream
3 oz. cream cheese
1/2 teaspoon salt
1/4 teaspoon pepper
2 (7 oz. packs) shirataki angle hair noodles
In skillet set to medium- high heat, cook bacon. Once crisped, remove to paper towel lined plate. Pour out bacon fat, leaving 1/4 cup of bacon fat in skillet. Turn heat down to medium low. Cook onion and garlic in fat for a couple minutes.
Once softened, add in mushrooms and thyme. After cooking for about 8 minutes, add in heavy cream, cream cheese, salt, and pepper. Prepare shirataki noodles according to manufacturer’s instructions and then add to skillet.
Add cooked bacon back in, but leave 1/4 cup of it reserved for garnish. Let cook for 10-15 minutes. Plate. Garnish with bacon, thyme, and Parmesan.
