Keto Peanut Butter Coconut Milk Ice Cream


  • 2 (10oz. cans) coconut milk
  • 1/2 cup granular erythritol
  • 1/4 cup packed Sukrin Gold
  • 1/2 cup natural peanut butter
  • 1 teaspoon vanilla extract
  • 1-3 tablespoons of vodka (optional, helps to keep ice cream from freezing up too hard)


  1. Heat coconut milk, sweeteners, and peanut butter in sauce pan over medium heat. Once incorporated, stir in vanilla. Pour into ice cream maker and make according to manufacturers instructions. Serve with hot fudge and chopped peanuts.
