Keto Soft Pretzel Sausages with Thyme and Sugar-Free Syrup

  • 1 lb. Italian sausages, cut in half
  • 1 1/2 cups almond flour
  • 2 teaspoons xanthan gum
  • 2 eggs
  • 2 teaspoons quick acting yeast dissolved in 2 tablespoons warm water
  • 3 cups shredded mozzarella
  • 4 oz. cream cheese
  • 3 tablespoons melted butter
  • coarse pretzel salt
  • 1/4 cup sugar-free syrup
  • 3-4 sprigs thyme


  1. Heat oven to 350 F. Bake sausages for 10-15 minutes. Set aside.
  2. Melt mozzarella and cream cheese in bowl in microwave to 1 minute. Remove and stir with fork. Microwave again for 1 minute. Stir again.
  3. In stand mixer bowl, mix together flour, xanthan gum, eggs, yeast mixture, and half of melted butter. Add in cheese mixture. Mix for 10 minutes, scraping down the sides to make sure everything is mixed well.
  4. Roll out dough into long oval shapes and wrap around sausages. I had enough dough leftover to make one large soft pretzel :) Drizzle melted butter over and sprinkle with salt.
  5. Bake on parchment lined baking sheets for 20-25 minutes or until golden brown. Drizzle syrup over and sprinkle on thyme.
