Roasted Belgian Endive with Walnuts Blue Cheese and Balsamic Glaze

These are a perfect side dish for a special occasion dinner, or even just a regular old weeknight dinner.

ingredients:

  • 6 Belgian endives, sliced in half lengthwise, outer wilted leaves removed and tough part of root cut off
  • 1-2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup balsamic vinegar
  • 1 teaspoon Sukrin Gold
  • 1/3 cup chopped walnuts
  • 1/3 cup crumbled blue cheese

instructions:

  1. Heat oven to 425 F. In small saucepan, heat balsamic and sukrin gold to medium high heat. Cook for 5 minutes and let reduce, being careful to not let it get too hot and burn.
  2. Place endives on baking sheet. Rub olive oil on each and sprinkle each with salt and pepper. Brush on balsamic glaze on the tops of each endive. Bake for about 15-20 minutes or until the tops of the endives begin to crisp and brown.
  3. Remove from oven and place walnuts and blue cheese on endives. Bake again for about 3 minutes or until cheese begins to get melt. Serve while hot.
