Smoked Salmon Salad with Lemon Dill Vinaigrette

This salad is bright, light, refreshing, and has tons of healthy fats.

ingredients:

For the Salad
  • 6 cups baby spinach
  • 6 ounces smoked salmon pieces, torn or cut into strips
  • 1/2 cucumber, sliced
  • 3 radishes, sliced
  • 1 scallion, thinly sliced
  • 1 avocado, sliced
  • 2-3 soft cooked eggs
  • desired amount of dill lemon dressing (recipe below)
For the Lemon Dill Vinaigrette
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped dill
  • 2 tablespoons olive oil
  • 2 tablespoons heavy cream
  • sprinkle of salt and pepper

instructions:

For the Salad
  1. Assemble all ingredients in bowl. Drizzle on desired amount of dressing.
For the Lemon Dill Vinaigrette
  1. Whisk lemon juice and dill together in small bowl. While whisking vigorously, slowly pour in olive oil. Then slowly whisk in heavy cream. Sprinkle in salt and pepper.
