Keto Soft Pretzels with Philly Cheesesteak Dip

Two amazing things come together here and magic is made.

Feel free to make your pretzels as big or small as you want them! Make them into sticks, hearts, or just little pretzel nuggets! They are one of our favorite Keto treats!

Pro tip: Make sure your cheese is really melted with no visible shreds. This will make rolling out the pretzels way easier. Also, letting the dough cool a little will make them easier to roll out as well.

Keto Soft Pretzels with Philly Cheesesteak Dip

This is quite the low carb treat. Delicious Keto Soft Pretzels to be dipped in a creamy and hearty Philly Cheesesteak Dip. There's nothing better than this.

ingredients:

FOR THE SOFT PRETZELS
  • 3 cups shredded mozzarella
  • 4 tablespoons cream cheese
  • 1 1/2 cups almond flour
  • 2 teaspoons xanthan gum
  • 2 eggs
  • 2 teaspoons dried yeast, mixed in 2 tablespoons warm water and set aside for a few minutes
  • 3 tablespoons melted butter
  • Pretzel salt for sprinkling (or coarse sea salt)
FOR THE DIP
  • 1 small onion
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced mushrooms
  • 8 oz. shaved beef
  • 8 oz. cream cheese
  • 4 slices provolone, diced
  • 1/2 cup shredded cheddar
  • 1 cup heavy cream
  • 2 tablespoons hots

instructions:

FOR THE SOFT PRETZELS
  1. Heat oven to 375 F.
  2. Microwave mozzarella and cream cheese in bowl for 1 minute, stir, then microwave again for another minute or until melted.  Make sure there are no visible shreds of cheese.  The more melted the cheese is, the easier it is to roll out.
  3. In standing mixer bowl, add your flour, xanthan gum, eggs, yeast mixture, and half of melted butter together. Add in cheese mixture and use hook attachment to mix. Let mix, scraping down the sides as you go, for about 10 minutes.
  4. Roll out a sheet of parchment paper.  Roll into roughly 15" ropes (about 1” diameter thick). Form into pretzel shape by putting ropes into U shapes, twisting the ends and placing them at the bottom of the U.  Put on parchment lined baking sheets.  Drizzle other half of melted butter on top and sprinkle with course sea salt. Place on parchment lined baking sheet and bake for about 20 minutes or until golden brown on the outsides.
FOR THE DIP
  1. Saute onion on medium heat in large skillet. 
  2.  Once softened, add pepper and mushrooms.  
  3. Saute for 5 minutes, then add beef.  Let cook through.  
  4. Add in cream cheese, provolone, cheddar, heavy cream, and hots.  Stir until melted and hot.
