Apricot and Pistachio Dark Chocolate Bark

This dessert is simple yet elegant. The flavor pairings of apricot, pistachio, dark chocolate, and sea salt are truly so complimentary.

You can use a double-boiler method to melt your chocolate, but I find that just putting the chocolate in a glass bowl and microwaving at 30 minute intervals is much easier. Just don’t over heat it or your chocolate will seize up! I take mine out of the microwave while there are still visible pieces- the chocolate will keep melting and become smooth after it comes out.

Feel free to use whatever chocolate you prefer. I used 85% dark for this. The added toppings really cut through the bitterness.

I love that people can select their own size piece of chocolate and snack on it at their own pace. This will definitely be our new go-to quick and delicious dessert!

Apricot and Pistachio Dark Chocolate Bark

This delicious dessert is so fast and easy to make. The dark chocolate is elevated with the lovely flavor pairings of apricot, pistachios, and sea salt.


  • 12 oz. dark chocolate of your choice (we used 85% dark)
  • 3 tablespoons chopped pistachios
  • 2 tablespoons sugar-free apricot preserves, softened in microwave
  • 1 teaspoon coarse salt


  1. Melt your chocolate by putting it in a microwave safe bowl and microwaving at 30 minute intervals, stirring between each, until melted.
  2. Line baking sheet with parchment paper.  Pour chocolate onto sheet an spread it out with a spatula.
  3. While chocolate is still melted, swirl in your apricot preserves.  Sprinkle on pistachios and salt.  
  4. Let harden for about 45 minutes.  Break into pieces once hard.


The nutritional info is for 85% dark chocolate.  Adjust macros if you use a different chocolate.
