Keto Blueberry Lemon Crumble Bars

Nothing says spring like blueberries and lemons. And that’s why these Keto Blueberry Lemon Crumble Bars will be perfect for a spring weekend breakfast or even to take to a picnic, shower, or really anywhere you need to bring a dessert!

Keto Blueberry Lemon Crumble

This sweet treat is perfect as a weekend breakfast or even as a dessert.

ingredients:

FOR CRUST
  • 2 cups almond flour
  • 2 tablespoons erythritol (or other sweetener)
  • 2 teaspoons lemon zest
  • 1/8 teaspoon salt
  • 1/2 cup butter (chilled and cut into small pieces)
  • 1 egg
  • 1 teaspoon vanilla extract
FOR THE FILLING
  • 2 cups blueberries
  • 1/4 cup erythritol (or other sweetener)
FOR CRUMBLE TOPPING
  • 4 tablespoons butter (room temperature)
  • 1/4 cup Sukrin Gold
  • 1/2 cup almond flour

instructions:

  1. Preheat oven to 400 F.
  2. Line 9 x 13 casserole dish with parchment paper.
  3. In medium bowl, stir together flour, sweetener, zest, and salt.
  4. Cut in the butter until the mixture has coarse crumbles.
  5. In separate bowl, beat the egg and vanilla together and stir into the crumb mixture until a dough forms.
  6. Press into the bottom of your pan and bake for 12-15 minutes or until turning golden.  Remove and set aside.
  7. In small bowl, mix blueberries and sweetener together.  Sprinkle over crust.
  8. In medium bowl, mix butter, Sukrin Gold, and flour together til mixture is crumbly and sprinkle over the top of the blueberry layer.
  9. Bake for about 25 minutes or until browned.
