Keto Mint Chocolate Chip Ice Cream

This cool and refreshing low carb ice cream is perfect no matter if it is winter or summer. It is so easy to make and absolutely delicious. And just about any sweetener will work! So break out your ice cream maker and get churning!


  • 2 cups heavy cream
  • 2 cups almond milk
  • 1 cup sweetener (I used a mix of granular and confectioner erythritol)
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon salt
  • desired amount of green food coloring
  • 1 cup chocolate chips of your choice (sugar-free or very dark is best)


  1. Mix all ingredients in a bowl except for chocolate chips.
  2. Make according to ice cream maker manufacturer's instructions.  Add chocolate chips in to ice cream maker about half way through or 30 minutes into churning.
  3. Garnish with chopped chocolate chips.
