Chorizo Goat Cheese and Poblano Fundido

This cheesy dip is full of complimentary flavors and is a little more upscale than your usual queso!


  • 2 Poblano peppers
  • 8 oz. chorizo, cooked
  • 4 oz. cream cheese
  • 1/4 cup heavycream
  • 8 oz. pepper jack cheese, shredded
  • 6 oz. goat cheese


How to cook Chorizo Goat Cheese and Poblano Fundido

  1. Place peppers on baking sheet and bake at 425 for 15 minutes, turning halfway through.
  2. Place in bowl and cover with plastic wrap and let sit for 5 minutes.
  3. Remove skin and cut open to remove seeds.  Chop.
  4. In  medium sauce pan over medium low heat, add chorizo, cream cheese, heavy cream, pepper jack, and 4 oz. goat cheese.  
  5. When melted, pour into cast iron skillet and top with remained goat cheese.
  6. Bake at 350 until melted and bubbly.
  7. Top with hot sauce and cilantro.
